This C-2 epimer of glucose exists predominantly in the α-pyranose form (68% in solution), featuring mutarotation equilibrium (α↔β) and optical activity ([α]D²⁵ = +14°→+29°). It demonstrates excellent water solubility (25 g/100mL at 25°C), moderate solubility in ethanol (1.2 g/100mL), and insolubility in nonpolar solvents.
